Grilled Bruschetta Chicken


Prep Time: 5 min.
Total Time: 30 min.
Makes 4 servings


1/4 cup KRAFT Sun-Dried Tomato Dressing, divided
4 small, boneless and skinless chicken breast halves (1 lb.)
1 medium tomato, finely chopped
1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
1/4 cup chopped fresh basil or 1 tsp. dried basil leaves
PLACE large sheet of heavy-duty foil over half of grill grate; preheat grill to medium heat. Pour 2 Tbsp of the dressing over chicken in resealable plastic bag; seal bag. Turn bag over several times to evenly coat chicken with the dressing. Refrigerate 10 min. to marinate.
REMOVE chicken from marinade; discard bag and marinade. Grill chicken on uncovered side of grill 6 min. Meanwhile, combine tomatoes, cheese, basil and remaining 2 Tbsp dressing.
TURN chicken over; place, cooked side up, on foil side of grill. Top evenly with tomato mixture. Close lid. Grill an additional 8 min. or until chicken is cooked through (165°F).

Blueberry Sour Cream Cake

This is a great thing for a family breakfast. I know it will be added to our larger family get togethers.

2 cups flour
1 tsp baking soda
1 cup brown sugar
1 tsp cinnamon
1 cup chopped nuts- optional
1 cup sugar
1/2 cup butter
1 tsp vanilla
3 eggs
8 oz sour cream
2 cups blueberries

bake for 45-50 min
lightly glaze with a powder sugar, vanilla, milk, butter mixture. Can add sweetness depending on how tart or sweet the berries are.  Emily made this for us while we were in KS City.  I refused to leave without it.

No bake Chocolate Eclair Cake

9x13 straight edge pan- slightly greased

Box of Graham Crackers

2 Packages of Instant French Vanilla Pudding
3 cups milk
8 oz cool whip

Beat these three things and let set while making frosting, When frosting is done lay down whole rectangles of graham crackers till bottom of pan is covered, you may have to break the last one. Then layer the pudding, crackers again, pudding, crackers. Your top layer will be crackers.


Frosting
2 Tbsp butter
2 packages liquid or 2 squares unsweetened chocolate-(if you use hard make sure to melt with a little butter)
1 tsp Vanilla
1 Tbsp Karo light syrup
1/2 cup powdered sugar
2 Tbsp milk
Mix all together and frost the cake. Refrigerate overnight for best results

We had this while we were on our trip, Emily's (from the blog) mom made it and YUMMY!!! Not to be missed lets just say that!
